Meet Brad: Our Master of Seed Extraction!
At KPC, we're all about using every part of our wonderful kiwifruit – right down to the seeds, which provide an extremely rich source of Omega 3 and 6 oils. With that in mind, we're excited to introduce Brad Jeffrey. The newest addition to our team, Brad is taking charge at The Seed Factory as our Seed Extraction Manager. As a member of KPC's founding 'Jeffrey' family, Brad has literally grown up in the kiwifruit industry. Combine this with his strong work ethic and deep understanding of both the industry and factory operations, and you can see why we're thrilled to have Brad on board.
Golden Kiwi White Chocolate Cheesecake
Our Golden Kiwi White Chocolate Cheesecake recipe combines the sweetness of ripe golden kiwifruit with the indulgent creaminess of white chocolate. The golden kiwifruit adds a burst of tropical flavor to the rich and velvety cheesecake filling, perfectly complementing the buttery biscuit crust. This dessert is a delightful twist on a classic cheesecake that is sure to impress any crowd.
Base:
500 grams digestive biscuits
200 grams butter, melted
Filling:
250 grams cream cheese
250 ml thickened cream
150 grams white chocolate, melted
Topping:
4 gold kiwifruit
Instructions:
Crush digestive biscuits and mix with melted butter.
Press crushed biscuit mixture into the bottom of an 8-inch cake ring and chill in the refrigerator for 1 hour.
In a bowl, mix the cream, cream cheese, and melted white chocolate.
Pour mixture on top of biscuits in the cake ring and leave to set in the refrigerator overnight.
Peel and blend kiwifruit into a puree, then layer on top of the filling.
